Fitness Challenge Day 30 – 430 by 4/30

A big YES! to Team Sumoflam!

I did it.  Didn’t think I could, but I was at the 430 pound mark by 4/30.  I weighed in this morning and was at 429.8….a drop of 20.2 pounds for the month of April.  It hasn’t been easy, but then, good things never come easy.  Following is my weight loss chart for the month of April.  It came as a result of dietary change, walking and sheer fortitude at times.

A owe a great deal to Team Sumoflam, all of the great family, friends and associates that have been there to encourage and support.  And, there is no finish line.  I am pursuing my next milestone, which I hope to get to this week…to do a 2 mile walk without stopping.

Blueberry Steel Cut Oatmeal

As far as my day went, it was a good one overall.  Started it off with a nice bowl of steel cut oats with blueberries.  It was quite tasty indeed!

I really like steel cut oats with added fruit.  Always seems to provide me with a full feeling and a good deal of energy.  A great boost in the morning.

Had a great day at work as well and finished off the previous days’ asparagus and fingerling potatoes for lunch coupled with another one of those fabulous Lady Alice apples (thank you Bountiful Baskets and Rainier Fruit Company!!).  I actually had a salad-in-a-jar to go with the lunch, but I was too full to eat it.  Seems like I am filling up faster now!

As part of the day’s activities I finished off my Book Review of Rob Roy’s “The Navy Seal Art of War,” and had a great day at the office.

Dinner at Gumbo YaYa – Voodoo Red Beans: a very intense mix of red beans, tomatoes, onions, garlic, green bell peppers, celery and jalapenos.

Thursday has become Date Night for Julianne and me.  We typically go somewhere for dinner…not tons of choices in Lexington, but there are a few good ones.  Last night we went to Gumbo Ya Ya.  We love Cajun cuisine and this is one of our favorite places, especially since they have vegetarian and vegan options daily.  Gotta stay PlantPure!

Yesterday’s vegan option was Voodoo Red Beans – a spicy concoction of red beans, tomatoes, onions, garlic, green bell peppers, celery and jalapenos.  I topped mine off with their fiery Habanero sauce to get my capsaicin rush.

But, there are always down sides to eating out.   For instance, you can’t totally control what is in the ingredients.  As well, if there are no leftovers to take home (which, for us there are typically none), then we have nothing prepared for lunch the next morning, unless of course we have previous dinner leftovers hanging around.

But, ultimately, it is nice to not have to prepare a meal occasionally. Especially last night, when Julianne had a big homework project and I had a couple of web projects to work on.

That being said, I did not get a walk in last night.  I gave my knees a rest and had work to do.  But, I would like to close today’s post with an inspirational quote from Martin Luther King Jr.  This is another of those pearls of wisdom now emblazoned in my mind.
