Fitness Challenge Day 34 – PlantPure Nation Cooking

PlantPure Nation Cookbook – Yummiferous

It came in yesterday! Yes, the PlantPure Nation Cookbook. When we went to see the movie a couple of weeks ago (see Review Here), the cookbook was touted in the movie and there appeared to be some awesome recipes.  So, after the movie I had tried to sneak over to get one, but, alas, they were all sold out.

So, the next day I go online and ordered one. (You can get one here)  I became enthralled with the “meat loaf” substitute and some of the other whole food plant-based recipes shown in the movie.  Many are great substitutions for what we are used to.

A quick perusal through the cookbook showed wonderful recipes for potato salad (using a cashew-tofu mayo), amazing totally vegan desserts, some fabulous looking entrees and more.  Can’t wait to try some of the awesome goodness, especially knowing that they will reduce my cholesterol, help me continue to lose weight and still let me eat things that taste good and remind of the “original – not so healthy” things I love to eat.

I just said “NO!” to brownies at the office

As for my day yesterday, I had a great one.  Had fruit for breakfast and enjoyed bean soup and salad for lunch.

I had a small victory during a meeting yesterday.  There were some scrumptious looking brownies on the conference room table for anyone to grab and enjoy.

I grabbed and just said “NO!” as everyone watched.  Still staying strong, though these were REALLY tempting. I ate a banana instead.  Took care of the sweets craving.

I made it through the day drinking lots of water too.  Julianne challenged me to drink a gallon and I came close. But, I really don’t like getting up every hour to walk to the restroom.  A gallon a day is A LOT of water to drink!!  But, I think I will get used to it.

Here is my Two Mile Smile!

After getting home I immediately went on a walk.  I didn’t get one in over the weekend because I had to rest my knees.  But, I was happy in that I was able to get two miles in again.

The first mile went well, but it was plenty warm out and a mile and a half into it I was getting cramps in my calf and the knees started complaining again.  However, I was determined to get my two mile smile in.

I was also encouraged as a couple of neighborhood folks recognized me and encouraged me.  Always nice to have more Team Sumoflam friends and fans!

I finally did finish the walk and got in 2.12 miles.  It took longer than usual, but the key was that I got the two miles in!

MapMyWalk for 5/4

After the walk, I got a rest in, but was kindly reminded by Julianne that I also said I would mow the backyard after I got back.  UGH!!  The grass had grown to almost a foot tall…we had been too busy, or rainy…we never got to it.

But, I kept my promise. I even ran my MapMyWalk app and it showed that I logged another half mile over 27 minutes.  So, effectively, I put in 2.6 miles and walked for about an hour and half.

By the time I finished mowing, I was dead tired exhausted.  It was all I could do to walk in the house and sit down in front of a fan with cold water and try to cool down.

It was nice to know I did the job.

Tamale dinner

After the workouts, we had our “pre-Cinco de Mayo” dinner of tamales, Mexican rice, refried beans and salad.  I was starved and just literally scarfed it down.

The nice thing about this dinner is that it was totally plant-based (except for the little bit of lard in the tamale masa)

After dinner we had some cold fresh watermelon, which came from our Bountiful Baskets order.  That was uber refreshing.

Finally got to lay this old body to bed, but the muscles were sore and made for a difficult night of sleep (even despite the warm shower before bed).  Nevertheless, the bed sure felt good!!

Happy Cinco de Say-No, to you and the fabulous Julianne. Man, Mexican food is a really hard one for me to control, so it’s great to see this can be done in a loe-cal way. I guess you could use nopalitos too, but they are higher in salt, most likely. I’m interested to know what you think of the PlantPure cookbook’s recipes.
So, is all chocolate off your list, even if it’s vegan?

PlantPure Nation Cookbook has some marvelous recipes. And, no, chocolate is NOT off the list. In and of itself, chocolate is plant pure as long as it is not made with milk. Dark chocolate is perfectly fine. Just must be eaten carefully.
