Its Go Time – starting the 21 Day Vegan Kickstart

We are officially starting today…this morning. We weighed in. My start weight is 457.2. That is considerably higher than I was on Jan 23, 2012, when I weighed in at 445.0. So, I have a bit more to go. However, I was also at 467 in October, so I have lost some since then.

I am also doing a BEFORE photo today (which I will post later in the year….with an initial AFTER picture as a progress stage).

Finally, we are going to measure my arms, chest, waist, thighs and ankles to see if there is any difference in these.

Next “official” weigh in will be next Saturday morning.

Breakfast: Steel Cut Oatmeal with fresh bananas and Turbinado Brown Sugar

Lunch: Balsamic Zucchini Sandwich and Curried Tomato Lentil Soup

Balsamic Zucchini sandwich

The Balsamic Zucchini sandwich is made with Whole Wheat buns, zucchini grilled in balsamic vinegar and garlic with a blended white bean and roasted red pepper spread. It is topped with fresh basil leaves.

Curry Tomato Lentil Soup – Shorba Addis

Shorba Addis is a thick soup made from brown lentils, whole wheat orzo, Yukon gold potatoes, chopped carrots and Berbere curry (also known as Ethiopian Curry). This dish has great texture and flavor. I love how the bite has the richness of curry and then shortly thereafter the zing of cayenne pepper. Berbere is a great new discovery in our curry adventures!!
