Today’s Dinner – Vegan Fettucini

It has been a busy day with meetings and eating out. But, Julianne pulled out another lovely dish. Who would have thought we could have a low fat and tasty VEGAN Fettuccini meal?

Vegan Fettuccine with Spinach and Artichokes

Julianne started with a recipe from here

She followed this recipe except She did not use cumin, and used a teaspoon of dry mustard rather than the 3 Tbsp of Dijon. She also added dry basil, herbs de provance, and added 2 diced roma tomatoes in addition to the baby spinach leaves. She also added a can of artichoke hearts, halved and she used fat free nayonaise instead of the Vegenaise.
