Update: 14 pounds lost in 14 days!!

I have been pushing hard the past two weeks and I can see that it is paying off.  Over the course of two weeks I have lost 14 pounds as a result of eating almost completely vegan, juicing and dropping things like diet coke, etc.  As of yesterday morning (my 14th day on this), I weighed in at 447.8, down from the original 461.8 from the last Monday in July.

Vegan Stuffed Peppers with Cauliflower Sauce

Part of my success has been the wonderful meals that my wife has prepared.  Prime example is the one shown above.  We had bell peppers stuffed with a nice spicy Spanish rice (no oil), onions, garlic and mushrooms.  This was topped with a sauce made from blended cauliflower, smoky paprika, nutritional yeast, some liquid smoke and some other spices.  Not quite like a cheese sauce, but quite tasty and creamy.  We topped it with green onions.  We also had corn on the cob and fresh cantaloupe.  Great meal and plenty of leftovers for another one.  I am slowly but surely improving my tomorrows by acting on things today….
